Sift matcha into chawan, add 30ml water at 70C, paste with chasen, add remaining 70ml, whisk M-stroke 15s to pale foam, decant into 500ml PET pop-can.

Shake 4g Wako + 80ml cold water + yuzu + Maldon hard 12s in Boston shaker until full emulsion, double-strain over clear cube into PET, top with remaining 200ml Bistrica.

Wet half the coupe rim with bay-leaf infusion and roll in Ston sea salt — half-rim only. Whisk 2g Wako with 30ml hot Bistrica at 70C, 300mg KSM-66, 150mg Rhodiola SHR-5, 200mg ALCAR, and 100mg L-tyrosine to a smooth paste. Stir slowly into 180ml chilled Bistrica plus 20ml bay-leaf infusion in a mixing glass. Pour into coupe over a single 4cm clear ice sphere. Dust 0.2g fennel pollen across the meniscus through a fine-mesh sieve. Do not stir at the table.

Whisk 3g butterfly pea powder with 30ml warm sage infusion to a smooth cobalt-blue paste. Stir into 250ml chilled Bistrica. Pour into chilled glass or PET. Express one lemon-peel swath over the rim, drop in. Drink within 20 minutes — the blue oxidises slowly toward magenta on contact with citrus pH, that gradient is the visual signature.
