AOI is the volume hero and the brand identity in a can. The cobalt halo is not garnish — it is the logo, executed in liquid, layered through density rather than colour-pigment trickery. Butterfly pea cold-brewed at 3% delivers a true #0000FF pH-stable tone that floats above the green oat-matcha base for the first ninety seconds. You drink the gradient before you stir it.
Gen-3 raises lion's mane to 500mg — clinical-loading territory — and adds phosphatidylserine at the EFSA 100mg floor plus 80mg Suntheanine. Compounds, not poetry. Lion's mane fruiting body is now 500mg of an 8:1 extract from functionalmushrooms.eu — clinical-loading territory rather than maintenance trickle. Phosphatidylserine 100mg from sunflower lecithin (no soy, allergen-cleaner) modulates HPA-axis cortisol response and supports membrane fluidity in cortical neurons. Suntheanine 80mg — the patented L-isomer L-theanine from Taiyo Japan — stacks with the matcha's native ~50mg theanine to push alpha-wave generation into a clinically observed range. The matcha stays at 2.5g Wako, oat stays unsweetened Oatly Barista, the cobalt is the only theatrical ingredient. Wabi-sabi: the drink is most beautiful when it is about to stop being beautiful.
We price AOI at EUR 11 — the lowest on the menu — because this is the SKU that recruits the customer. First-time orders, walk-by intercepts, the friend a subscriber brings on Sunday. The economics survive the gen-3 dose bump because PS lands at sub-thirty cents, Suntheanine at sub-twenty cents, and the lion's mane jump from 250mg to 500mg adds about sixty cents to COGS at EUR 2.40/g (functionalmushrooms.eu spot price). Whisk 2.5g Wako with 30ml water 70C, 500mg lion's mane, 100mg PS, and 80mg Suntheanine to smooth paste, combine with 220ml cold oat over ice in shaker, pour into PET, slowly layer 40ml butterfly pea infusion on top via bar spoon.
Fresh oat, cut hay, faint earthy-mushroom undertone from lion's mane, no perfumed top note.
Creamy entry, unsweetened, oat sugars round the matcha edges, mid-palate carries a green-bean savouriness lifted by a faint lecithin weight from the phosphatidylserine.
Clean, slightly floral once the butterfly pea integrates, a longer savoury tail than gen-2 — PS reads as soft umami rather than sweetness.
Round, full body, slow gradient collapse — you watch the cobalt fall through the green for the first sip. PS adds a subtle viscosity at the back of the palate.

Three-vector cognitive stack. (1) Hericium erinaceus fruiting body 500mg 8:1 — hericenones cross the blood-brain barrier and stimulate NGF synthesis in the hippocampus, supporting synaptic plasticity. The 500mg dose delivers ~4g whole-fruiting-body equivalent, inside the studied 1-3g/day clinical window. (2) Phosphatidylserine 100mg — incorporated into neuronal membrane bilayers within hours, modulates HPA-axis cortisol response under cognitive load, and supports acetylcholine release. EFSA approves a structure-function claim for PS at 100mg/day for normal cognitive function. (3) Suntheanine 80mg — stacks additively with matcha's endogenous L-theanine (~50mg from 2.5g Wako) for ~130mg total. L-theanine increases alpha-wave power in the occipital cortex within 30-45 minutes and shifts attention from default-mode to task-positive networks under caffeine co-administration.
Lion's mane shows linear cognitive benefit up to ~3g whole-equivalent daily — 500mg 8:1 puts a daily AOI subscriber comfortably inside that window. PS plateaus at 100-300mg/day; we land at the floor of efficacy because subscribers stack across the week. matcha terroirWako again — same Uji single-cultivar source as MU. We use the same matcha across the menu so a customer cross-tasting MU and AOI tastes the recipe difference, not the leaf difference. That consistency is the most expensive operational decision MA7CHA has made and the one most cafes refuse to make.

The tumbler form factor preserves the gradient layering that PET does for delivery — vertical column, narrow base, cobalt pool reads through the clear top section of the glaze. The pour translates from can to ceramic without losing the brand cue.
