MU
無Two and a half grams of Wako, one hundred millilitres of soft water at seventy degrees, whisked to a pale jade foam and poured short into a transparent can. Nothing else, on purpose.
MU is the negative space the rest of the menu reacts against. Every other SKU borrows umami, cobalt, fig leaf, lion's mane, ALCAR — MU borrows nothing. It is the brand telling the customer: we know how to do less, and we charge full price for it. The 200ml fill in a 500ml vessel is not a mistake. It is a deliberate restraint signal, a quiet middle finger to the smoothie-bowl maximalism that defines wellness drinks from LA to Dubai. You see the empty space. That is the product.
The reference is Ippodo Kyoto's morning bowl ritual and the silent first pour at a Marukyu Koyamaen tasting. We strip the bowl, keep the pour, hand it to a person walking from Porto Montenegro to a 9:00 meeting. Ceremonial Wako single-cultivar from Marukyu Koyamaen, whisked at 70C, served in a 500ml clear PET pop-can. Nothing else, on purpose.
This is the SKU that separates MA7CHA from cafes. Anyone can sell a flavoured latte. Almost no one in the Adriatic will hand you 2.5g of competition-grade tencha in a clear can on a Tuesday morning and trust you to understand what just happened.
The build.

Sift matcha into chawan, add 30ml water at 70C, paste with chasen, add remaining 70ml, whisk M-stroke 15s to pale foam, decant into 500ml PET pop-can.
Wet stone, cut grass, faint nori, the warm-paper smell of fresh tencha. No top note tries to lead.
Soft umami arrival, sweet on the tip of the tongue, no astringency in the first two seconds. Texture before flavour.
Cooling, slightly saline, a clean exit at around twelve seconds. The cup wants to be drunk slowly.
Suspended fine-particle silk. Foam collapses slowly against clear PET — visual of the brand.

L-theanine in shade-grown tencha (~25-35mg per 2.5g serving) crosses the blood-brain barrier and increases alpha-wave activity in the occipital and parietal cortex, producing what is now well-documented as relaxed alertness. Paired with ~70mg caffeine at a 1:2 theanine-caffeine ratio, the effect is a smoothed pharmacokinetic curve — slower onset, lower peak, longer plateau, no jitter, no crash. EGCG and other catechins additionally modulate adenosine receptor binding and contribute mild anti-inflammatory tone. No exogenous adaptogens are added. The drink is a single-input cognitive primer.
2.5g of competition-grade tencha is the lower edge of a traditional usucha bowl and the upper edge of what most Western lattes deliver. We hold this dose because below 2g umami collapses, above 3g astringency dominates a thin water base. The 1:40 matcha-to-water ratio at 70C is the Marukyu Koyamaen house standard for daily drinking grade.

Forty-two, German, runs a single-family-office desk from a top-floor at Regent. Wakes at 06:30, rows on a Concept2, refuses coffee. Orders MU on standing weekly auto. Drinks it on the balcony before opening Bloomberg. Pays for the empty space in the can.
Thirty-one, Croatian, teaches private Vinyasa to villa clients in Lustica. Between sessions she sits at the marina, takes the can out, removes the lid, drinks it as if it were a chawan. The can is not the point. The two and a half grams are the point.
Sixty, retired surgeon, swims 1km off Plavi Horizonti every morning May to October. Walks back to the apartment in salt-wet hair, picks up MU at the door. The mineral finish lines up with the seawater still in his sinuses. He has tried every drink on the menu. He keeps coming back to this one.
Where it comes from.
matcha terroirWako is a Marukyu Koyamaen daily-grade single-cultivar matcha from Uji, Kyoto Prefecture, stone-milled within hours of arrival from a 21-day shaded harvest. Uji's clay-rich soil and morning river fog produce the deep umami and low astringency the cultivar is known for. We source via MantoCafe in Krakow — a Polish friend's atelier — hand-carried 2-3kg per Tivat visit. The cold-chain breaks Japan-Poland-Montenegro never exceeds three weeks from mill, kept in nitrogen-flushed 30g pouches at 4C until the morning of service.
adriatic elementsBistrica spring water from Niksic — soft, low TDS (~120 ppm), bicarbonate-dominant, almost identical mineral profile to the Uji municipal supply matcha is traditionally whisked with. We test pH weekly. The water is not a marketing detail. It is the second ingredient.

If you stay home, the can is not the right vessel. The chawan is. Dominika Miłobędzka throws each one on a kick wheel in Kotor, fires reduction in a small gas kiln. The cobalt pool catches the foam, the unglazed wall absorbs the heat. Drink at the table, two hands.

Green oat-matcha base, 500mg lion's mane fruiting body, 100mg phosphatidylserine, 80mg Suntheanine, butterfly pea cold infusion floated as a cobalt halo through clear PET. The drink is the wordmark. You see #0000FF before you taste anything.
Four grams Wako, lion's mane fruiting body 8:1 at 750mg, KSM-66 ashwagandha, ALCAR, CDP-choline, 7,8-DHF (experimental BDNF-mimetic, disclosed), pterostilbene, MCT C8, L-theanine, 0.2g activated charcoal that turns the column teal-black through clear PET.
